In memoriam

Happy Memorial Day, dear readers! In the past I haven’t done such a great job of honoring the holiday itself here on the blog, other than a short mention. But that’s probably because I’ve been very fortunate that most of the servicemen in my family are honored instead on Veteran’s Day, as they went on to live long and happy lives after their service to our country.

Still, I decided to take some extra time for this Memorial Day to find some photos of my great-uncle Ray, an Air Force pilot who was killed in a plane takeoff.

That also gave me time to reflect on the few others I know who died in service – my elementary/high school classmate, a childhood friend’s husband – which made me then reflect on all the other soldiers I don’t know who died serving this country.

It was a bit overwhelming. But if you haven’t done that yet this holiday... I encourage you to try.

And finally, if you’re planning to celebrate the memory of these soldiers in an outdoor gathering, I owe you a few recipes worthy of this holiday! How about one of these:

Frozen berry crème pie

Avocado ice cream

Lemon almond ice cream

Peanut butter banana froyo

Sangria pops

No matter how you spend it, I hope you enjoy your holiday!
